Spicy Coconut Soup with Vegetables and Tofu (Sayur Lodeh Pedas) Ingredients

1 200 gr tempeh (soy bean cake).
2 2 chokos.
3 200 gr white tofu.
4 1/2 red onion.
5 3 garlic cloves.
6 3 long red chilies.
7 3 jalapenos (optional).
8 2 cups coconut milk.
9 1 cm galangal.
10 1 bayleaf.
11 2 cups water.
12 1/2 tsp salt.
13 1/2 tsp pepper.
14 1/2 tsp sugar.
15 2 tbsp cooking oil.

Cooking Instructions

Step 1 Cut up tempeh, tofu, and chokos, put aside..
Step 2 Grind red onion, garlics, and long red chilies, put aside..
Step 3 Pre-heat cooking oil in a pot, cook ground ingredients until a little bit dry, add salt, sugar, pepper,galangal, jalapenos, and bayleaf, add water, mix well..
Step 4 Add chokos, tempeh, and tofu, wait until they are cooked properly..
Step 5 Add coconut milk, stir it until the soup boils properly..
Step 6 Serve it with steam rice, perfect to consume on cold days..
