African Cuisine: Tomato Stew infused with green vegetables


Tomato Stew infused with green vegetables Ingredients

1 1 Tbsp Olive Oil.
2 1 Large Onion.
3 Handful Chili Pepper.
4 1 Ginger.
5 Salt.
6 Garlic powder.
7 Pepper.
8 Crayfish (optional).
9 Green Vegetable of choice.
10 4 Tomatoes.
11 Seasoning cube to taste.

Cooking Step by Step

Step 1 Blend the pepper, tomato, ginger, and garlic into a smooth paste. Cook the paste under low heat for approximately 10 minutes..
Step 2 Add chopped onions, crayfish, seasoning cube, salt and then stir properly..
Step 3 Cover the stew to cook for five minutes. Add the chopped vegetable (I used Kale and spinach). Stir well and cover the pot..
Step 4 Allow the vegetable to cook for just a minute on low heat. Add the seasoning cube and a little water to the pot if it appears dry. Cook for five minutes and dig into this African delicacy..
Step 5 I served mine with Basmati rice and Grilled chicken..
