Sweet potato porridge with ugba and ugu Ingredients

3 big tubers of sweet potatoes. |

1 big onion bulb. |

6 pieces yellow fresh peppers. |

1 cup crayfish. |

1 cup ugba (oil bean). |

3 cups washed and sliced ugu leaves. |

2 tablespoons dadawa. |

1/2 cup palm oil. |

1 spoon salt. |

2 cubes Maggi magic pot and 1 cube of royco goat meat. |
Cooking Instructions
Step 1 |
Pound the pepper, crayfish, half of the onion and dadawa together. Set aside.. |
Step 2 |
Slice the remaining onion.. |
Step 3 |
Wash the ugba.. |
Step 4 |
Peel the potatoes, cut into chunks, wash and transfer to a pot. |
Step 5 |
Add the chopped onions, pounded pepper mix, salt, seasoning cubes and 3 cups of water.. |
Step 6 |
Boil till potatoes are almost done then add the ugba and palm oil. Cover and allow to cook for another 5 mins.. |
Step 7 |
Add the sliced ugu leaves, mix, check for seasoning and adjust where necessary.. |
Step 8 |
Turn off the heat and serve. |
