
African Dish: Yam Donuts.
Yam Donuts. Ingredients

medium sized yam. |

crushed cornflakes or breadcrumbs. |

flour. |

eggs. |

medium scotch bonnet. |

large sized onion. |

garlic. |
8 |
sugar. |

salt. |

Curry powder. |

seasoning cubes. |

classic powdered onga. |

chilli powder. |
14 |
Water for boiling. |

Oil for frying. |
Cooking Step by Step
Step 1 |
In a pot, combine yam with salt and sugar, add water and boil till very soft, this will takes to about 15 minutes.. |
Step 2 |
Grind onion, scotch bonnet and garlic in a mortar till quite smooth (but I prepare using asanka a Ghanaian grinding instrument).. |
Step 3 |
Add the boiled yam to the grind onion, scotch bonnet and garlic in the mortar.. |
Step 4 |
Start beating to about a minute, add 3 cubes, 1/4 teaspoon powdered onga and Curry powder.. |
Step 5 |
Continue beating for about 5 minutes to obtain a very soft and sticky grind yam.. |
Step 6 |
Take some grind yam, using two hands, mould it into a fine ball shape.. |
Step 7 |
Toss the yam using two hands, adjust the edges. Form Pattie like this.. |
Step 8 |
Take clean bottle cover or small cycle cutter. Drop the cover on the top of the center of the Pattie and press it inside.. |
Step 9 |
Remove the centre as shown.. |
Step 10 |
Combine flour with chilli powder, 1 seasoning cube, powdered onga and Curry.. |
Step 11 |
Dip the yam in the spiced flour.. |
Step 12 |
In a bowl, whisk egg and dip the coated yam in the egg.. |
Step 13 |
Coat the yam with cornflakes.. |
Step 14 |
Follow the same procedure till the yam is used up, the yam is now ready for frying.. |
Step 15 |
Fry both side on a medium flame, transfer to a colander to drain the excess oil… |
Step 16 |
Serve.. |
Step 17 |
Serve with ketchup or any desired dipping sauce.. |
