Easy Yummy Eba and vegetable soup certainly is one of my favorite nigerian cuisine. I always use this special recipe to serve Eba and vegetable soup. I like to keep awake before I travel so that I can sleep during my flight and this was one of those; I had a great nap.

1 Prepare leaf of Water.
2 Prepare of Okasi from my mum inlaw.
3 Take of Yellow pepper.
4 You need of Red oil.
5 Take cube of Knorr.
6 Take of Onga.
7 Prepare of Dry fish.
8 Take of Stock fish.
9 You need of Goat meat.

It is a good combination that I cannot forget I wouldn't say I eat eba more than I desire it. For me, I love African dishes but the truth is that, right now, I don't eat it the way I would have wanted it. Eba is a Nigerian staple food eaten all over the country and beyond. It is made from fried grated cassava (manioc) flour, commonly called as garri.

Cooking Step by Step

Step 1 Slice your vegetables..
Step 2 Parboil your stocks and meat. Add your red oil,pepper crayfish, knorr and onga..
Step 3 Allow it to boil for 10mins,Add your okasi and water leaf.
Step 4 Ready to serve.

Most of the Soups you would learn to prepare from this blog are not usually served alone in Nigeria. A classic African dish which can be served as an accompaniment to dishes such as Egusi Soup. This my first attempt at eba. It came out a but lumpy. I think I will try turning off the heat before adding the gari.
