Traditional matoke#4weekchallenge Ingredients

1 green bananas.
2 potatoes.
3 large tomatoes sliced.
4 large onion sliced.
5 carrot sliced.
6 coriander diced.
7 garlic diced.
8 green capsicum sliced.
9 Stock.
10 Salt.
11 Oil.

Cooking Step by Step

Step 1 Prepare all the ingredients.
Step 2 In a saucepan, add oil and garlic till brown. Add onion and sweat it..
Step 3 Add capsicum and tomatoes and salt. Let them cook well.
Step 4 Add matoke and potatoes. Pour in the stock and let them cook at low temperature to get a nice thick sauce. Add the carrots and coriander 5 minutes before removing from the heat to prevent from over cooking..
Step 5 Remove from the heat and serve. Garnish appropriately.
