Coconut White Rice and chicken stew Ingredients

1 parboiled Rice.
2 Coconut milk.
3 Peas and diced carrots.
4 salt.
5 For the stew.
6 Cooked chicken.
7 Tomatoes,red pepper and onions grinded.
8 Ginger and garlic paste.
9 Diced onion.
10 Seasoning and oil.

Cooking Guidances

Step 1 Add coconut milk to a pot on a medium heat,when it boils pour in the parboiled rice add a pinch of salt and peas.allow to cook.when rice is almost done add the carrot and steamer.
Step 2 Fry chicken until golden brown and set aside,in a separate pan add the desired amount of oil add the onion together with garlic and ginger paste sautee for 2 minutes.
Step 3 Pour in your already grinded and boiled tomato mix and allow to Fry on a low heat.Add in your seasoning and continue to stir when the stew is done add the fried chicken and allow to cook for 2 minutes.
Step 4 Serve and garnish with cucumber and carrot. Enjoy the rice with a chilled cup of pineapple juice.
