You can simply prepare Amba Khatta (traditional odia style instant raw mango pickle) in 18 ingredients and 11 steps. Here is cooking guidance how you can easily make it.

Ingredients

1 It’s 250 gms of mango.
2 It’s 4-5 tsp of mustard oil.
3 It’s To taste of Salt.
4 Prepare 1/2 tsp of turmeric powder.
5 Take 1 tsp of chilli powder.
6 It’s 4-5 tsp of powder jaggery.
7 Take 1 of small onion chopped.
8 Prepare 8-10 of garlic cloves.
9 About 1 inch of ginger.
10 Approximately 1 of green chilli.
11 It’s 1 tsp of punch photon.
12 You need 1 pinch of hing.
13 About 8-10 of curry leaves.
14 It’s 1/2 tsp of cumin seeds.
15 You need 1 of red chilli.
16 About 1/2 tsp of coriander seeds.
17 Take 1/2 tsp of fennel seeds.
18 It’s 1 cup of water.

Cooking Instructions

Step 1 Cut the mangoes in cube sizes..
Step 2 Roast cumin seeds, coriander seeds, fennel seeds and red chilli for 1-2 minute and make the powder of it..
Step 3 Heat a pan and add half of the oil and fry the mangoes by adding half of the salt, turmeric powder and chilli powder till the colour changed in medium flame and keep them aside..
Step 4 In the same pan put rest of the oil and then add Hing and punch photon in it..
Step 5 When the mustard in the punch photon crackle add the chopped onions and curry leaves and then add the crushed ginger, garlic chilli in it..
Step 6 Add the fried mango in it and mix it well..
Step 7 Then add rest of the salt and Jaggery powder in it..
Step 8 Cook it for 2-3 minutes in low flame and then add water in it..
Step 9 Allow it to boil for 2 minutes and then add the powder spices in it..
Step 10 Mix it well and again cook for 2-3 minutes and then switch off the flame..
Step 11 Now your instant raw mango pickle or amba khatta is ready. Serve with rice as a side dish..
