West African Foods: Spicy Plantain Pepper Soup


Spicy Plantain Pepper Soup Ingredients

1 fingers of unripe plantain.
2 spinach (efo shoko).
3 Ginger (grated).
4 bulb of onion (chopped).
5 Scotch bonnet (chopped).
6 curry.
7 thyme.
8 pepper soup spice.
9 medium sized cat fish(mackerel was used).
10 Knorr cube.
11 Salt.
12 Vegetable oil (optional).
13 water.

Cooking Guidances

Step 1 Peel and dice plantains into cubes.
Step 2 Put plantain cubes in a clean pot, add chopped onions, scotch bonnet, ginger, time, curry,pepper soup spice, seasoning and water. Allow it to cook for 20mins.
Step 3 Add vegetable oil, fish and spinach. Allow to cook for 10 mins.
Step 4 Add salt to taste and allow it to simmer for 2-5mins..
Step 5 Serve.
